Best Foods

Summer dinner - bacon, avocado, lemon juice, olive oil, cheese, bow tie pasta

Goat Cheese Spinach Quinoa- loved! But only makes enough for 2 servings at most... Instead, use 1 cup quinoa (cook in 2 cups water for 25 minutes)

Skillet Lasagna


  1. I made the top recipe (pasta salad) just by "winging it". I spiced it up with a few more ingredients.

    8 oz of pasta
    1 tomato—diced
    2 avocado—diced
    5 mini banana peppers—thinly sliced
    1/2 of a cucumber—peeled, quartered, and sliced thinly sliced
    4 slices of bacon—cooked crispy
    1/2 tsp salt
    1/2 tsp pepper
    Juice of 1/2 lemon
    1/2 cup of freshly grated parmesan cheese

    I chopped up all the veggies before I started the pasta. In a large mixing bowl I whisked the oil, lemon juice, salt, and pepper together to make a light dressing. Then I added all the veggies except for the avocado, bacon, and almost all of the cheese and mixed until coated with the dressing. When the pasta was done I rinsed it and let it cool and then mixed it in in the bowl with the rest of the ingredients. Finally, I added the avocado to the mixture. Served in cereal bowl and garnished with cheese the remainder of my cheese :)
